Rosa Jackson
Rosa Jackson is a culinary writer and cooking teacher based in Nice. She founded Les Petits Farcis - a cooking school rooted in the Nicoise tradition - and wrote the book that bears the name of the cuisine she has spent years learning from the source.
How did Le Petit Farcis begin?
I was working as a food writer in Paris, on a train to Nice one afternoon, and the idea arrived whole. A cooking school that would let people experience the city as locals do. I moved, built a website, found clients one by one. It happened over time and without a clear plan.
What does the work look like day to day?
We visit markets, shop together, cook, share a meal. The idea is to create a feeling of family through food. Participants leave knowing something about Nice they couldn’t have found in a guide. That’s what I’ve always been trying to give people.
What are you working on next?
Another book. And longer courses — five days instead of one. And more curated trips. Morocco, Japan. Places where the food tells you something about how people actually live. That’s always been the thing: food as a way into a place, not just as an attraction itself.
